Makes 2 to 3 servings
- 6 large carrots
- 1 tablespoon extra virgin olive oil
- 1 teaspoon curry
- 1 teaspoon garlic powder
- 1/2 teaspoon Himalayan Pink sea salt
Preheat oven to 425 degrees Fahrenheit. Wash and peel each carrot. Slice the carrots into fries (or use mandolin), and then add to a mixing bowl. Add olive oil, curry, and garlic powder. Mix until the carrot fries are well coated. Line a baking sheet with parchment paper. Add the carrot fries in a single layer. Bake for about 20 minutes. When the fries are brown, remove from heat, and immediately sprinkle with sea salt.
